Ingredients
- 1 Pork Loin
- 2 cups brussel sprouts (cut in fourths)
- 1 Cup apples (diced)
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 4 cloves garlic
- 1 TBSP sriracha
- 3 TBSP coconut aminos (This one is great: https://amzn.to/3RPTbRo)
- 1 TBSP mustard
- Olive oil
- Sea salt
Directions
1. Preheat your oven to 375˚F. In a small mixing bowl combine paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper. Rub this spice mix all over the pork tenderloin.
2. Toss brussel sprouts and apples in 2 tbsp olive oil and some sea salt. Set aside.
3. In a skillet, heat 1 tablespoon olive oil over medium heat and sear the pork tenderloins until browned on all sides; about 3 to 5 minutes per side. Add brussel sprouts and apples to skillet.
4. In a bowl, combine garlic, honey, soy sauce, mustard, Sriracha, and oil; whisk until well combined. Brush this mixture over the pork tenderloin, brussel sprouts and apples. Keep some of the mixture for serving.
5. Roast skillet with items in the oven for 25-30 minutes then remove (until pork reaches 145 F internally).
6. Remove the skillet from the oven and allow it to rest for 10 minutes. Slice the pork and serve, using the juices to pour over the meat.
