Remember that yummy breaded chicken recipe? It goes GREAT in a salad!

One of my favorite salads to make by far.

Ingredients

  • GF breaded chicken (find recipe here)
  • Brussel sprouts, quartered
  • Broccoli, chopped
  • Avocado, sliced
  • Spring mix lettuce
  • Favorite vinaigrette dressing
  • Olive oil
  • Feta cheese (optional)

Instructions

  1. Make GF breaded chicken as said by recipe given on recipe page.
  2. Set oven to 400 degrees. Place quartered brussel sprouts and broccoli in a bowl and cover with olive oil and salt. Place on baking sheet and cook for 25 min until slightly crispy.
  3. Place spring mix lettuce, brussel sprouts, broccoli, sliced avocado, chicken, dressing and feta cheese (optional) together and enjoy.
