The first time I tried these smashed potatoes I was pleasantly surprised! They were so flavorful and good. Finding a great side can sometimes be difficult to come by. We have all tried the usual roasted and mashed potatoes. But when you are able to find a new way to cook a simple ingredient it brings life to your meals!
Ingredients
- 8-10 baby yellow potatoes
- 1/2 cup vegan butter or olive oil (I use Miyokos vegan butter)
- 1 tsp salt
- 1 TBSP minced garlic
- 1/2 TBSP Italian seasoning
Instructions
- Preheat oven to 425 F. place potatoes in medium sized pot, cover with water. Bring to a boil.
- Boil potatoes until softened then drain water and allow the potatoes to cool slightly,
- Place the potatoes on a lined baking sheet. Carefully mash the potatoes halfway so that the bottom is still intact.
- In a small bowl combine melted butter (or olive oil), garlic and salt.
- Drizzle or brush the mixture over each potato and sprinkle with italian seasoning.
- Bake for 30 minutes. Serve Warm.
