The first time I tried these smashed potatoes I was pleasantly surprised! They were so flavorful and good. Finding a great side can sometimes be difficult to come by. We have all tried the usual roasted and mashed potatoes. But when you are able to find a new way to cook a simple ingredient it brings life to your meals!

Ingredients

  • 8-10 baby yellow potatoes
  • 1/2 cup vegan butter or olive oil (I use Miyokos vegan butter)
  • 1 tsp salt
  • 1 TBSP minced garlic
  • 1/2 TBSP Italian seasoning

Instructions

  1. Preheat oven to 425 F. place potatoes in medium sized pot, cover with water. Bring to a boil.
  2. Boil potatoes until softened then drain water and allow the potatoes to cool slightly,
  3. Place the potatoes on a lined baking sheet. Carefully mash the potatoes halfway so that the bottom is still intact.
  4. In a small bowl combine melted butter (or olive oil), garlic and salt.
  5. Drizzle or brush the mixture over each potato and sprinkle with italian seasoning.
  6. Bake for 30 minutes. Serve Warm.
