Though this recipe is not paleo, it IS gluten and dairy free! I love finding recipes that allow you to still enjoy the foods you love with ingredients that is much better for your gut and health! I used an Olive Garden copycat chicken gnocchi recipe and changed the ingredients and method to fit a gluten and dairy free lifestyle. I thoroughly enjoyed this recipe and hope you do too!

Ingredients

  • 3 TBSP vegan butter (I used Miyokos European vegan butter)
  • 1 TBSP olive oil
  • 1/2 cup onion diced
  • 1/2 cup celery diced
  • 2 garlic cloves
  • 1/4 cup gluten free flour (I use this one: https://amzn.to/3RKEDT9)
  • 2 cups dairy free milk (I used oat milk)
  • 1 32 oz carton of chicken broth
  • 1 TBSP fresh thyme
  • 1 cup shredded carrots
  • 1 cup fresh spinach leaves
  • 1 1/2 cup diced cooked chicken breast or rotisserie chicken
  • 1 13 oz cauliflower gnocchi (Trader Joes sells this in their frozen section)
  • salt and pepper to taste

Instructions

  1. In a large pot add vegan butter and olive oil. Over medium heat sauté the onion, celery and garlic until tender.
  2. Add the flour, stirring as you slowly add it in, to create a roux. Slowly add the dairy free milk and chicken broth. Stir until it starts to thicken (you can add a little gluten free cornstarch if you would like to make it thicker).
  3. Add the thyme, carrots, spinach, chicken and gnocchi. (If you think your carrots will need a bit to cook, wait to add the gnocchi until 5-7 minutes before you are ready to serve as it will get soggy if cooked for too long).
  4. Add salt and pepper to taste. We added a bit more salt and pepper and it turned out perfect to our liking, keep taste testing to find your right amount! Serve.
