I am usually not attracted to curry recipes, but I had been seeing a lot
of coconut curry’s and thought i would give it a try.
I was very pleased with the result and would definitely make it again!
Ingredients
- 2-3 chicken breasts, cut into cubes
- 1 can of full fat coconut milk (Like this one: https://amzn.to/48JNb3w)
- 3 golden potatoes, peeled and cut
- 5-6 Tbsp curry powder
- 1 tsp ginger powder
- 3 Tbsp minced garlic
- 2 Tbsp cumin
- 4 Tbsp olive oil
- Fresh parsley
- Sea salt
Directions
- drizzle olive oil in hot pan and cook minced garlic until fragrant.
- Season chicken pieces with sea salt and 1 Tbsp curry powder then add to pan. Cook for 5 minutes until almost cooked through. Add potatoes and cook an additional 5 minutes.
- Add Can of coconut milk, fill empty can half way with water and mix in as well. Add curry powder, cumin, and sea salt then mix well. Taste to see if you need to add more seasoning.
- Bring to a boil then cover and cook for 10 minutes until potatoes are tender. Then stir in some fresh parsley or add on top.
- Serve over a bed of rice or any side dish you prefer.
