My first successful Paleo dish and it’s a 10/10, trust me. With just 5 easy ingredients, this pudding will change your life whether you’re a Paleo addict or not. The recipe came from a family friend who lives out-of-state and is known for her impressive yoga skills and even more impressive cooking skills. She was doing avocado toast before it became #avocadotoast if you know what I mean.
Ingredients
- 1 can of coconut milk (Like this: https://amzn.to/3H4OjmN)
- 1/4 cup of chia seeds (Like this: https://amzn.to/3TWPHPI)
- 1 tablespoon vanilla extract
- 1 tablespoon raw honey
- Pinch of salt
Instructions
- Whisk the coconut cream, vanilla extract, honey, and salt together in a bowl.
- I use a fork and swirl it around a few times to combine all of the ingredients and then add in the chia seeds and swirl some more.
- Once everything is married, I cover the bowl and store it in my fridge for breakfast the next day. It needs to set overnight (about 12 hours) so the chia seeds become plump and thick. When I make this, I double the recipe and it’s what my family eats for breakfast every morning. And bonus, it’s already made when you wake-up!
- You can get creative with toppings but I prefer to keep ours simple with fresh fruit like blueberries or raspberries. However nuts, coconut shavings, and sunflower seed butter would also be delicious.
- It also lasts up to a week in your fridge but you’ll eat it before then.
