I think this may be my favorite breakfast food! It is hearty, easy and I can store them in the freezer and take out whenever I get hungry.

Ingredients

  • Bacon (1 per taco)
  • Eggs (1 per taco)
  • Almond flour tortillas (I love these ones: https://amzn.to/3RQItuh)
  • Olive oil
  • Salt

Directions

  1. Heat oven to 425 degrees. Place bacon on pan (I have a wired rack I put on top of a baking pan) and cook for 15 minutes (I like my bacon soft, so cook based on your preference of bacon).
  2. Scramble together eggs in a bowl with salt. Then heat pan, add olive oil and add eggs then scramble.
  3. Cook tortillas on pan (15-20 seconds on each side).
  4. Assemble taco with egg and bacon. I like to make more then freeze them and pop them in the microwave whenever I need a quick meal.
