I love these muffins! They’re not too sweet, but just sweet enough to hit that sweet tooth craving! I found this recipe at “wheat by the wayside” website and substituted coconut sugar for granulated. These are not paleo, but are gluten and dairy free!
Ingredients
- 1 3/4 Cup Gluten free flour (I use this one: https://amzn.to/3RKEDT9)
- 1 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1/2 Cup Coconut oil (melted)
- 1/2 Cup Coconut sugar (I use this one: https://amzn.to/3H3YXtY)
- 2 Eggs
- 1 Cup Mashed bananas
- 1 tsp Vanilla extract
- 1/2 cup dairy free chocolate chips (I like these ones: https://amzn.to/3vp8hGl)
Instructions
- Preheat oven to 350 F. Grease Muffin pan or fill with liners.
- Blend dry ingredients in a small bowl and set aside.
- Cream coconut oil and coconut sugar together then incorporate the eggs and vanilla.
- Add in the bananas and mash together then stir until well combined.
- Blend wet and dry ingredients together. Stir in chocolate chips.
- Scoop into muffin tins and top with extra chocolate chips.
- Bake at 350 F for 20-24 minutes. Let cool and enjoy!
