I love these muffins! They’re not too sweet, but just sweet enough to hit that sweet tooth craving! I found this recipe at “wheat by the wayside” website and substituted coconut sugar for granulated. These are not paleo, but are gluten and dairy free!

Ingredients

  • 1 3/4 Cup Gluten free flour (I use this one: https://amzn.to/3RKEDT9)
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1/2 Cup Coconut oil (melted)
  • 1/2 Cup Coconut sugar (I use this one: https://amzn.to/3H3YXtY)
  • 2 Eggs
  • 1 Cup Mashed bananas
  • 1 tsp Vanilla extract
  • 1/2 cup dairy free chocolate chips (I like these ones: https://amzn.to/3vp8hGl)

Instructions

  1. Preheat oven to 350 F. Grease Muffin pan or fill with liners.
  2. Blend dry ingredients in a small bowl and set aside.
  3. Cream coconut oil and coconut sugar together then incorporate the eggs and vanilla.
  4. Add in the bananas and mash together then stir until well combined.
  5. Blend wet and dry ingredients together. Stir in chocolate chips.
  6. Scoop into muffin tins and top with extra chocolate chips.
  7. Bake at 350 F for 20-24 minutes. Let cool and enjoy!
