brown cookies in black ceramic bowl

These shortbread cookies have captured my taste buds lately! If you are trying to cut out sugar but need just a little something sweet, this is perfect! They are so easy to make and you can live without the guilt of binging on a batch of cookies! Thanks to ‘the conscious plant kitchen’ (with a couple adjustments on my end), I have  a new favorite!

Ingredients

  • 1 ½ cup almond flour – I like this one: https://amzn.to/47nCgvp
  • 4 TBSP maple syrup
  • 3 TBSP coconut oil or vegan butter
  • 3/4 tsp vanilla extract

Directions

  1. Preheat oven to 325°F. Add all the ingredients in a bowl and combine until ingredients are well mixed together (use your hands if you need).
  2. scoop out small ball of dough and place on baking sheet then use a fork to flatten each cookie.
  3. Bake for 10-12 minutes until slightly golden and slightly hard on top. cool and enjoy.
