There’s nothing like fresh pancakes to get your day started! I love finding a good pancake recipe (like this one from Love & Lemons) and adding some yummy vegan chocolate chips on top!
Ingredients
- 1 1/3 cup Blanched almond flour
- 1 tsp Baking powder
- 1/2 tsp Sea salt
- 1/3 cup Dairy free milk (I used oat)
- 2 Large eggs
- 1 tbsp Pure maple syrup
- 1 tsp vanilla
- coconut oil or olive oil, for the pan
- Add-ins (optional: chocolate chips, blueberries, bananas..)
Instructions
- In medium bowl, whisk together almond flour, baking powder and salt.
- In a small bowl, whisk together oat milk, eggs, maple syrup, and vanilla.
- Pour the wet ingredients into dry ingredients and any add-ins, then stir. If your batter is very thick, stir in more dairy free milk.
- Heat nonstick skillet over medium-low heat and add your oil. Pour batter into the pan with 1/4 cup measuring scoop. Cook pancakes for 1-2 minutes per side or until slightly browned on each side.
- Serve with maple syrup.
