Refreshing and yummy. This simple salad goes perfect by itself or I enjoy adding it to a Greek chicken dish!

Ingredients

  • 1-2 Cucumbers (sliced and cut in fourths)
  • 1-2 cups cherry tomatoes (sliced in half)
  • Lemon juice from 1-2 lemons
  • Paleo Italian Dressing (I like this one: https://amzn.to/4aODmn4)
  • Salt
  • Pepper

Directions

  1. Mix cucumbers and tomatoes together in bowl then cover in lemon juice and mix well.
  2. Cover in Italian dressing then add salt and pepper and mix.
  3. Eat right away or store in fridge!
