This is a perfect recipe to put together before work in a crockpot or when you need a quick meal. Very tasty, especially when your pour the liquids over the chicken and potatoes, it enhances the flavor!

Ingredients

  • 3-4 Chicken breasts
  • 1 Yellow onion
  • 1-1 1/2 lb Baby potatoes
  • 1 Lemon
  • 2 TBSP Olive oil
  • 2 TBSP Honey
  • 4 Cloves garlic, minced
  • 1/2 TBSP Italian seasoning
  • Salt & Pepper
  • 1/2 Cup water

Instructions

  1. Peel and chop onion and place in instapot with 2 cloves minced garlic and a drizzle of olive oil. cook on sauté until onion is softened. (If using a crockpot, do this in small pan seperately). Shut off sauté once done.
  2. Wash and cut baby potatoes into halves or fourths. Add to instapot and stir in with onions and garlic. Place chicken breasts on top of potatoes.
  3. In a small bowl mix zest one 1 lemon, juice of 1 lemon, olive oil, honey, 2 cloves minced garlic, Italian seasoning, salt & pepper. Pour over chicken and potatoes. Add water to bottom of pot. (if using a crockpot, just add all the ingredients to pot).
  4. Close with lid and cook on high pressure for 7 minutes. slow release once done. (If doing crockpot, cook on low for 6-8 hours or high for 3-4 hours). Serve.
