This is a perfect recipe to put together before work in a crockpot or when you need a quick meal. Very tasty, especially when your pour the liquids over the chicken and potatoes, it enhances the flavor!
Ingredients
- 3-4 Chicken breasts
- 1 Yellow onion
- 1-1 1/2 lb Baby potatoes
- 1 Lemon
- 2 TBSP Olive oil
- 2 TBSP Honey
- 4 Cloves garlic, minced
- 1/2 TBSP Italian seasoning
- Salt & Pepper
- 1/2 Cup water
Instructions
- Peel and chop onion and place in instapot with 2 cloves minced garlic and a drizzle of olive oil. cook on sauté until onion is softened. (If using a crockpot, do this in small pan seperately). Shut off sauté once done.
- Wash and cut baby potatoes into halves or fourths. Add to instapot and stir in with onions and garlic. Place chicken breasts on top of potatoes.
- In a small bowl mix zest one 1 lemon, juice of 1 lemon, olive oil, honey, 2 cloves minced garlic, Italian seasoning, salt & pepper. Pour over chicken and potatoes. Add water to bottom of pot. (if using a crockpot, just add all the ingredients to pot).
- Close with lid and cook on high pressure for 7 minutes. slow release once done. (If doing crockpot, cook on low for 6-8 hours or high for 3-4 hours). Serve.
