There’s nothing like fresh pancakes to get your day started! I love finding a good pancake recipe (like this one from Love & Lemons) and adding some yummy vegan chocolate chips on top!

Ingredients

  • 1 1/3 cup Blanched almond flour
  • 1 tsp Baking powder
  • 1/2 tsp Sea salt
  • 1/3 cup Dairy free milk (I used oat)
  • 2 Large eggs
  • 1 tbsp Pure maple syrup
  • 1 tsp vanilla
  • coconut oil or olive oil, for the pan
  • Add-ins (optional: chocolate chips, blueberries, bananas..)

Instructions

  1. In medium bowl, whisk together almond flour, baking powder and salt.
  2. In a small bowl, whisk together oat milk, eggs, maple syrup, and vanilla.
  3. Pour the wet ingredients into dry ingredients and any add-ins, then stir. If your batter is very thick, stir in more dairy free milk.
  4. Heat nonstick skillet over medium-low heat and add your oil. Pour batter into the pan with 1/4 cup measuring scoop. Cook pancakes for 1-2 minutes per side or until slightly browned on each side.
  5. Serve with maple syrup.
