If you need a good homemade meal that is simple to put together for the family, this is it! The chicken comes out tender and the veggies are well seasoned from the juices and seasoning that drains off the chicken.

Ingredients

  • 1 Whole chicken
  • 2-3 Tbsp vegan butter
  • Coconut aminos
  • Olive oil
  • 3 Tbsp chopped garlic
  • 1 lemon, cut in half
  • 1/2 onion, cut into fourths
  • 3-4 Russet potatoes diced
  • 1 Bag of mini carrots, cut in half

Instructions

  1. Rub the chicken with olive oil and season with salt and pepper then stuff with lemon and onion.
  2. Place slices of vegan butter and chopped garlic on the chicken then brush on a generous amount of coconut aminos.
  3. Add chopped potatoes and carrots around the chicken on a foil covered baking sheet, Season with salt, olive oil and coconut aminos.
  4. Place in oven at 375 degrees for 60 minutes (or until it reaches 165 degrees Fahrenheit), brushing on more coconut aminos every 20 minutes.
