This is a great side with any dish! Its got a crunchy

outside and soft buttery inside.

Ingredients

  • 3-4 Russet potatoes, peeled
  • Olive oil or vegan butter, melted
  • Minced garlic
  • Italian seasoning

Directions

  1. Preheat oven to 400 F. Take potato and sliced thinly across the potato, not cutting all the way through but just enough to spread apart. (tip: I use two chopsticks and place them on each side of the potato tightly as you cut and it will keep you from cutting all the way through)
  2. Mix together Olive oil (or butter) with garlic and brush across each potato. Sprinkle potato with Italian seasoning.
  3. Place potatoes on baking sheet and bake for approximately 45-60 minutes (continuing to brush potatoes with oil/garlic mix every 10 minutes.)
