I’ve said it before, one of the hardest things to give up for me, is butter! But finding a good recipe that can create that yummy buttery flavor feels like such a win!

Ingredients

  • 1-2 Lbs of chicken breast
  • 1-2 lemons sliced
  • 4 Tbsp vegan butter (I use Miyokos)
  • 3 Tbsp minced garlic
  • Thyme

Instructions

  1. Melt butter in skillet and add minced garlic, cook for one minute then add chicken breast. Sear on each side and spoon over the garlic butter onto the chicken. cover with thyme then add lemon slices and Put in oven at 350 for 20 minutes (or until it reaches 165 degrees F).
  2. Once done, take off lemon slices and spoon garlic butter over chicken again. Serve with sauce over.
