There’s something timeless about meatloaf. It is a simple but yummy family meal! It’s always fun to find a paleo recipe for an entrée you’ve been craving and this was that for me!
Ingredients
- 2 Lbs ground beef
- 1/2 cup almond flour
- 2 eggs
- 1/2 onion4 cloves minced garlic
- 1 TBSP paleo friendly ketchup (I use this one: https://amzn.to/47x3wrv)
- 2 tsp Italian seasoning
- 1/2 tsp sea salt
- Topping:
- 1/3 cup ketchup
- 1 1/2 TBSP coconut aminos
Instructions
- Preheat your oven to 350. Lightly grease a 9×5 loaf baking pan. Combine all of the ingredients in a large bowl and mix well using your hands.
- Transfer the mixture to the loaf pan and push down to even it out and ensure there are no air bubbles. Bake for 30 minutes.
- While it’s baking, mix the topping.
- When the meatloaf comes out of the oven, spread the topping on top evenly. Place back into the oven for 30-35 minutes. Let the meatloaf cool for 15-20 minutes before slicing. Enjoy!
